Micronutrient starvation is a silent foe – its harmful effects may not be felt for years, and yet it is the number one cause of poor immune function and, therefore, disease. Micronutrients include vitamins, minerals, and important chemicals found in plant foods (called phytochemicals). Some micronutrients are well known, such as vitamin C and calcium, while others may be less familiar, such as carotenoids and bioflavonoids. Even though many micronutrients may not be listed on the side of a cereal box and don’t have an RDA, they are essential for optimal health.
