According to Nina Teicholz, the author of The Big Fat Surprise, everything you’ve heard about saturated fats is wrong.
While she was investigating dietary fats, Teicholz discovered that there was no real scientific evidence that saturated fats are bad for you. She even goes so far as to claim that the research “proving” that fatty foods can lead to an increase in heart attacks has been jimmied. Objective observations of worldwide dietary habits, she says, prove just the opposite of what your doctor has always told you.
“When you have a scientific hypothesis that does not explain your observations,” she says, “you can’t ignore your observations.”
