The myth that these were extremely healthy foods began, he suggests, with the highly successful 20th century US marketing campaign claiming that oils produced from domestic crops – including soy – supported cardiovascular health, while vilifying other (actually more heart-healthy) fats such as coconut and palm oils or dairy fat.

Healthful, fermented soy foods include, for example, natto, miso, and tempeh – but not tofu.
